Can anyone tell me how to render a 2D floor plan? I know how to shade it, but I want the materials to be represented accurately...

Go to a 3D view, in the view cube click with right button and choose orient to a plane, choose the plan you want then render.....

How about - go to 3D view - activate & adjust section box - go to top view - render?

Thanks! That was a big help. One last question, I have 2 floors that need to be rendered in plan view, how do I make revit only look at the first floor?

You can use either Typhoons or gprakash's suggestions.  With Typhoons, orient the view to the appropriate level, with gprakash's method adjust the section box to the appropriate height.
