Hi,
I am wondering if anyone knows how to modify the revit level family so that I can extend the line underneath my text to the end of my text? I appreciate this may be a simple problem, but I've been racking my brains for an hour or so now and can't figure it out.

It's not such a simple fix.
The easiest thing to do is place the text on the inside of the level symbol. It's an annotation category nested within a system family, so having the ability to change these individually is not so simple (I would guess probably not possible.) Annotation families don't allow dynamic resizing with push/pull arrows (which I think is a good wishlist item) and they definitely don't allow it while nested within a system family.
To edit the level head:
1. Open the Level Head family (under annotations)
2. Under VV, turn on reference planes
3. Move the Label (Text) and Symbol to the left side of the Vertical Reference Plane.
4. Load into project and over-write existing versions (but not parameters
5. Re-edit and re-lod the family until it's correct.
6. You don't have to save the family (although it's probably a good idea) after you load it into the project.
