I created a Title block and under Drawing Title I think I want two separate labels for the two lines of text. I want this because I want to control the line break. For example, I don't want it to say: Foundation Plan and Main Floor Framing Plan I want it to say : Foundation Plan and Main Floor Framing Plan But there is only one category for Sheet Name. I created "Sheet Name 2" Shared Parameter, but when I insert the title block into project it comes up as Project Information, so I can't change it sheet to sheet.

You need to add the shared parameter (in Manage->Project Parameters) to the appropriate category: Sheets. You'll have to remove the shared parameter you've already imported. Make sense? I can walk you through step-for-step if needed.
