I'm looking for a joist family that is parametrically adjustable for ridge offset, depth and length.  Does this exist somewhere or do I need to generate this myself and what would be the best way to build this family?

What do you mean by ridge offset?  What type of joist?  Wood/Steel?

The top chord offset refers to the ridge point not being at the center of the joist.  We sometimes have a roof where the ridge point is not in the center of the joist and the slope will differ from one side of the ridge to the other.  I would like to have a double pitched joist family that is parametric where I could simply enter in the data needed and have the joist as required.  For the moment I have created a 3-d model of my joist and then imported into my project as a mass family.  It seems to work ok, but not really what I would like to have.  I'm pretty new to revit and I'm still learning what I can and can't do with it.

You could modify a wood truss family from this site but I would not do what you want to do.  I would look at doing a simple one slope rafter with adjustable slope.  Then just place another instance of the family with a different slope for the other half.
