Categories are preseted organisation in every project in Revit, which represent all types of Revit components (Family) you can have. Except adjust the graphical appearance and visibilty, not much you can do with them.

Sub-categories are organisation of a category, they are partly preseted and some are from the components you loaded into the project, also you can add more sub-category under a category from time to time, if you need.

The function of Sub-categories are same as categories, which are used for adjust graphical appearance, visibility control and  organize the project.

Hope that helpful

Look, the CATEGORIES are e.x.: "DOORS", "WINDOWS", ETC. and the SUB-CATEGORIES: "MULLIONS", "FRAMES", "GLASS", etc..., the sub-categories make part of a Categorie Family...

You can create sub-categories from within the model or a family.   Settings / object styles then pick the "Modify subcategory" new.

If you want this to work at the family level, you must create the sub category there.  Once you load a family with a new subcategory, that sub category will be loaded.

So the answer is yes, you can have movable and non-movable and cotrol them through VG.
