You can add them by using the Paint Brush tool then selecting the material and the face of the element you wish to paint.

This information will only show up automatically on a material schedule/quantity take off...  Any method used to get it into the room schedule will be manual.  One option is to align multiple schedules on the sheet.

Switch to a shaded with edges view OR apply materials that have Solid Fill hatches of the appropriate colour to them.
