Is there a way to change a type parameter into an instance parameter in an existing family? I want to change the material of the cabinet families that come with revit without having to create a new type for every material.

Sure ... Just edit the family, select the parameter and change it from type to instance. If you have the family already loaded and used, it will not be replaced and this new family will show up as xxx2 or something like that. To fix, just select all instances of the old family - swap them to the new then you can delete the old one and rename the new one correctly.
