Revit 2008-I have loaded the curb profile, repeatedly, but it is not one of the options when it comes to creating a new hosted sweep on a slab edge. Any suggestions? Anyone? Anyone?

First check to make sure the curb profile is set to the proper family category. If so the after loading into the project you will need to make a new sweep type and apply the profile in there. Go to Hosted Sweep-->Slab Edge. Click properties and select Edit/New-->Duplicate and in that box there should be a line to select the profile.
