I would like to use the dimension tool in my details, but need to overwrite the actual numerical value with text. This was possible in AutoCAD, can I do the same thing with Revit 2008? I know there is a prefix and suffix option, but I need the numerical dimension to disappear... any suggestions?

I just type text over the dim. It hides the dim text just fine.

For more on the subject, just do a Forum search for "text" and "override". This has been much debated.
