I'm using Revit 9.1.  Can I put massing I created in place in a specific category...i.e. Roofs?? thanks

Yes,

 Use the "Modelling" Design Menu. Select "Create..." from near the bottom. Choose from the drop down list, which category you want to create your mass in.

What if the object has been already created? Is it possible to asign/change categories?

I don't believe so.

 

This method of creating components is "quicky and dirty"! But that results in limited flexibility.

If it is really a family, most of the time you can change its category but I don't know about in place families.   - Haven't tried that because I don't like in-place families.
