How do you get a cased opening to schedule like a door? I want it to appear in my door schedule.

Cased openings are not doors. As you noticed you don't use the "Door" tool to insert Cased Openings. All you need to do is edit the family and change the Family Category and Parameters to Door. After the change reload the opening and they will show up in the schedule.

You can get a cased opening in a door schedule and you would want that if it were a HM framed opening - these need to be scheduled as well because of the frame.  It may not be as critical if it is a wood framed opening with trim as that is not something that needs to be sized and purchased.  You can use the cased opening family out fo the box from Revit.  There are also some good door familys on revit city that have HM frames - you can rework them to frame only.
