is there a way to change already created tags, such as the elevation tag. I wish to make my own, but I can't figure out how! Is this possible

You can open the tag model, it should be a .rfa file. Then you can do a save as and edit the tag the way you needed it. Then click the green "load into project" arrow to place into you project. The tag should be in the annotation folder of your library.

Elevation tags are editable by going to settings>View Tags>Elevations
