HOW CAN I CHANGE THE ELEVATION TAG WITH A FAMILY THAT I CREATED?  I HAVE TRIED TO DO IT BUT I CAN´T CHANGE IT IN THE PROPERTIES WINDOW.

There are a ton of things that you could have done wrong.  The easiest thing I can think of is to just go modify the elevation annotation that you are wanting to change.  Then save it as a different name, and load it into your project.   You should then be able to select it from the drop down to choose the new type.  Other than that I cant really say why you dont see, just many different things that could be the culrprit.

Select an existing level, go to its properties-->edit it and then choose your symbol from the drop down menu for symbol...

THANKS FOR ALL THE INDICATIONS BUT I ALREADY DONE WHAT YOU SAID. THE THING IS THAT WHEN I OPEN THE DROP DOWN IT ONLY SHOWS ME TWO OPTIONS FOR THE ELEV TAG THAT COME IN THE PROGRAM AS DEFAULT AND IT DOESN´T SHOW ME THE ONE THAT I CREATE AS A FAMILY AND LOADED INTO THE PROJECT. THERE MUST BE SOMETHING ELSE THAT I HAVE TO DO PREVIOSLY.

Do you mean Level Heads or Elevation Markers?

Level Heads are a family and are just loaded in.

Elevation markers are a system family and exist only in the project.  To change these go to Setting-->View Tags-->Elevations...

 Solved my problem instantly! I guess the solution on your website, Chris, is only needed if you really want to customize de look of the tag?
