Especially for small projects,

How do you place a ceiling plan and a floor plan on the same sheet ? Also might include other data such as schedules.

It's as simple as dragging the views onto a sheet from the project browser.  Adjust the scale of the views to whatever size you need to make them fit.  You can also simply drag the schedule from the project browser as well.

This is covered pretty well in the Revit Help file.  Even in the tutorials under the "Documenting your Project" you will find plenty of help on this subject.
