is there a way of having 2 different coloured insulation lines? eg, red insulation line for a firecheck wall and the standard grey insulation line for insulation batts, in the one project?

not that I'm aware of... if you go to line style setting you will notice that the insulation line is a system line that you cannot delete or edit. you can change the colour and thickness but that's about it. once the insulation line is drawn you can change width and aspect ratio. HTH

Click insulation line, right click and select override graphics in view.
