if you want to hide all the levels then you can do it from the view drop down menu. then go to visibility/graphics or simply press VG. on the annotation tab you should look for levels and unchek it.

if you want ot hide one level you can temporarly do it by selecting the levle you dont wnat and pressing in the glasses icon on the bottom of your screen. then select hide object.

Just a short cut suggestion, if you select a level marker and type VH (view hide) it will have the same effect as ALutfy's first suggestion.

I see that this is a rather old thread, but it seems that this problem is still shared by many.

I have discovered what I believe to be the current solution (as I am new to Revit).

My situation was that I wanted to be able to hide architectural level lines in my structural model (copied during the linking process)  Either way.

What I did was select the levels that I wanted to be structural and in the properties dialog set the 'structural' check box.

Then, I created a filter (view tab-graphic panel - filters) and created a filter based on Levels and defined the criteria to be Structural = no.

Then on the visibility/graphics go to the filters tab, add the new filter defined and uncheck the visibility check box.  This way any level that is not set as structural is hidden in the current view.

In my searchs I also notice people wanting to hide specific grids.  Same procedure just apply the filter on grids with the name set to the one that you want to hide and apply the filter as above.

Hope this helps.
