is it possible to have the components of a wall, roof or floor extend or be cut independent of the other components? e.g. ext. cladding over rim joist

Yes. If you go to a wall properties structure, open the preview and change to the section view you can actually unlock the layers from aligning to each other. Then when placing the wall's you can give a bottom or top extension for these layers. Refer to the revit inbuilt help for information on exactly how to do this...

Thanks, I'm starting to see results now. I'll have a look at the help menu. I'd like to know if I can add more funtions to the structure and have some less than 4mm thick for membranes and finishes e.g. tanking or termite barriers

It's really best not to think of these functions in terms of names. As far as i'm aware the names have no real function, its actually the priorities 1-5+Membrane. These are used by revit to determine which layers should join to each other in revit...

Yes, this is an old post so, please tell me if the help that you reference is available for RAC 2008.  If so , where because I can't seem to locate it.  I can't figure out how Mr. Spot says to "unlock" the finish element so that it extends up (or down) over the rim joist and subfloor.

Is there an easier way to do this so that the building sections are acurately represented?  Perhaps I'm thinking along the wrong lines and someone has a better solution to this issue that shows up in all two storey conventional wood frame construction.

If your floor extends to the backside of your finish material and your exterior walls go full height, you can have REVIT automatically cut out the area of the wall where the floor is.  This is a 3d solution.   In detail sections, you then add your rim joist detail.

Another option is to use the edit cut profile tool.  Remember, this tool allows you to cahage the profile of any component in both positive and negative directions.  This is only a 2d solution.
