in a window family, how do you modify the shape of the OPENING in the wall?

If you "tab" through the selections as your mouse is near the opening, you will eventually select the wall cut opening. Once selected you can hit the "edit" button on tool bar. This will take you to sketch mode to edit the profile of the opening.
