I want to create my own color of stucco, so I select stucco/tan/texture in acurender (The only choices are Tan,beige, grey, and white), then i change the color in the shading box, but it has no effect on the color when i raytrace. HOW do i change the stucco color to my choice? besides the limited options i'm given.

To change what accurender sees, you have to make a new material with a new jpeg for the image map. I think the easiest way to do this is open the image in a program like photoshop, change the color there, do a save as, then make a new material copying the existing stucco material. There should be a tutorial about making a new material in your help menu. Hope this helps.

I'm not positive if this is the best way to do it, but this is what I do. I find the file used for the mapping, edit the colors in photoshop or paint, save as a different name (ie blue stucco) then replace the map associated with the material, which is buried deep, deep, deep in the material/map editor.
