Is it possible to change the way demo objects (when shaded w/edges) show up as red?

In the Phases window, you can set the graphic overrides for any object which is being demo'ed. In a shaded view it is done with the material selected. Typically the graphic override is setup to go to the "Phase-Demo" material which is transparent red. You can go into the material editor and modify/duplicate this material, and then reassign it on the Graphic Override Tab of the Phases window(Settings > Phases).
Of course, if you don't want the demo'ed object to show at all you should chagne the phase filter for the view.
