Hello. Any ideas why the rendering options are greyed and can not be adjusted? I am using Revit 2019.

It's because you have a 'view template' applied.

I could see in the background of the image on the lower left (in a foriegn language lol) that you were applying a view template. Furthermore you can leave the view template being applied but just 'turn off' the 'Render Settings' aspect of the view tempate. See image.
