Hello,
I apologize now as I'm new to the website and its ways and this is my first forum post. I'm using Revit 2019 (Student Edition).
If I load a family into a project, for now assume it's the only thing in the project file, can I change the parameters I've set in the family's file in the project file? Can I also link those parameters into a sheet? (The take-off style sheets, not drawing sheets) If so, how?

If they are parameters, not fixed, then if they are type based, you have to create a new family type, if instance based, you can have multiple instances of the same family type each with it's own instance value. Examine the family.
Not sure what you are asking with the second question. If a parameter is shared, it can be reported in schedules.
