So addendums in Revit are pretty easy to handle becuase sheet control is the biggest thing and that is really an office issue not really a Revit thing, but what I am having problems with (and we had the same problem in CAD) are PRs (proposal requests). After a project is all designed and is under construction and there may even have been some addendums, then we get requests for proposed changes to the project. Lets say 10 changes - maybe small things on details and/or large changes to floor plans. Then lets say only 1 or 2 of those are actually accepted and made an addendum. How do I turn back the clock on only the other 8 changes. I thought about using options but I am not sure that is a great way to go. For now the office is just doing hand sketches for all the proposals and then only changing the Revit model when the addendum items are selected. Any other solutions?

Ouch... I hope you are being compensated by those making the proposed changes, until they are accepted, they are really not part of a typical contract. And I would treat them that way. Minimum documentation - sketches and text then add when accepted.
