Greetings.

I am trying to create a sloped floor slab using Split Lines and Modify Sub Elements, then use Parts to identify multiple finishes.  Does Revit allow this?

Split line and split face are two different tools. 

Split line: allows you to add linear edges and to split the existing face of a floor into smaller sub-regions.  Then with a variable thickness layer, the top face of the roof or floor can slope, and the bottom stays in a horizontal plane, creating a variable thickness floor.

Split face: allows you to modify the face material of elements.

I appreciate your response and the definitions, but perhaps you missed my question.

Can I use parts to define multiple materials on a floor slab and still have the functionality to warp the slab using modify subelements (i.e. split line and add point)?  

I am finding that once I've modified the subelements, I no longer have the option to create parts - if I create parts 1st, then I cannot access the modify subelements.  Perhaps this is a limitation of Revit 2016 ...
