Attempting to draw a basic gable roof, however, each of the bearing walls are at different elevations. The ridge line will be offcenter. Any suggestions as to how to do this simply ? Thank you.

Use roof by extrusion. In plan view set a reference plane & name it. Go to one of the gable end elevation and use roof by extrusion. Draw the top outline of the roof. In properties you will have to play around with the end extrusion or measure the roof length before you start. Have a look in the tutorials.

There are other options as well such as splitting the sketch and applying positive or negative offsets. For the most comprehensive roof explanations I've seen, log into the subscription center, go to the AU2005 website and download the class handout from BD31-1 "Moving On Up and Keeping Dry with Autodesk Revit - Stairs and Roofs" by Jim Balding and Scott Brown of WATG.
