Is it possible to make it so that the demo walls are not red while looking at shading with edges is turned on?

The color is controlled by the material "Phase - Demo"
Simply change that material definition to whatever you want.

Sorry Tom unsure what you mean. All I want is to make it to that the demo wall have no colour associated with it.

There is a material called 'phase - demo' that contols the color.
You need to modify the material setting.
Settings>Materials 'phase - demo' "shading color'

You can also change the material assigned to the demo phase.
Settings>Phases [graphic over rides tab]
Out of the box, the 'Phase - Demo' material is what Revit uses.
