one thing that i do is define a roof system that's the thickness of your drywall and use the various roof tools. i'm sure that there are other ways, but i am new too and have been experimenting with this method. HTH

Go to the modelling tab and use the Ceiling command. Up at the top click the Sketch command and put in the ceiling that is flat around the out side. If the sides of the tray ceiling are sloped start the ceiling command again and Sketch again and then put a slope to the ceiling and then enter again and put the high part of the ceiling in. If the sides are not sloped use a wall style for the sides of the tray ceiling.

Attemping my first tray ceiling.  I am trying to use the ceiling method but the problem I am having is it will only let me set one slope.  So do I need to piece the 4 slopes?  Is it not possible to make the 4 sloped sides as 1 ceiling? USING VERSION 9.1
