I was wondering how to create a wall sweep on a gable-end wall? I would like to show a trim board at the top of the gable-end wall that follows the angle at the top of the wall. when I try to use the wall sweep tool it seems to only let me move in the vertical or horizontal direction.

Wall sweeps are either vertical or horizontal - nothing else.   An in-place sweep will work but it will not be correct at the corners.

so at the corners can I use a void form to cut the portion of the sweep that I dont want to see? if so what would be the best void form to use in this situation?

Does it matter?  Any void you create (in-place) will work becuse you will set it to cut your sweep and will not cut anything else.

BTW - Not saying this is a good solution but a thin wall sketched to the same you need will also work as well as an in-place extrusion sketch to the shape.

you could use use a roof fascia with a negative horizontal profile offset the distance of the overhang. Just a thought.
