If I have updated the template that we use. Does Revit automatically update the projects using that template? If not, is there a way to repath them to the changed template? What is the best practice for updating the template?

Templates only supply the information to be used. It is really just a collection of families and settings and just loads those items into a new project. Once loaded, the template no longer exists in the project. If you want to change anything, you will have to do that manually.
