How do I make a custom roof like this?

You could use the massing tool to generate a roof mass. Then set a custom cross section (profile family) for the metal component and use the curtain system (by picking faces). I'm not sure about the angular sides, it's a matter of iteration. But hopefully the first two steps should get you started.
