I have an existing building that we are demolishing. The contractor wants us to show a "shaft" through multiple floors, where we cut out the floors, and are hoisting and rigging equipment. Is it possible to show a shaft's "walls" in 3D? I can't find anything in VG that helps, or through any filters.

Shafts do not have walls - they are openings. You can place 'shaft' walls that span multiple levels inside that opening. Just use a wall that is defined as your shaft wall. It could be thin and glass like property with the walls in a workset that is normally off.....
