So I want to get my sun to cast from top left. I havethe view template open to adjust it, but its all greyed out. How do I update this setting? without having to make a new view teplate

Uncheck photographic exposure and see what happens.

I must be doing something wrong. Phot exposure also greyed out, as the template has it all on lock down. Is it wrong to try to adjust the view templates from the view properties window? I click the view template, all the template choices come up and all their options, but only some of the stuff is adjustable. all the lighting stuff is greyed.

I think you need to click either 'Shadows' or 'Lighting' from the APPLY VIEW TEMPLATE window. It looks like you clicked Model Display. The GRAPHIC DISPLAY OPTION window that pops up seems to only let you edit the one you clicked on in the previous menu, from my experience. I don't have revit on this computer so I could be wrong.
