I feel that applying linework to a structural element is usually when all resources have been exhausted and one needs to get the project view out and shown correctly. How does one remove linework from an element at a later point in time? If it's a slab edge line, do I just redo boundary edit and replace segments that were changed?

You can change your linework back by using the <By Category> linetype
|

...or, you can duplicate the view – it will reset all the line work to ‘by category’ appearance.
