How can I make the curtain grid non-orthagonal with the edges of a curtain wall??

It is depended on the geometry of the buildng you are creating. If the curtain wall your creating is vertical, but you want to have some diagonal mullion, I will suggest you create 2 curatin wall systems place them in the same position, one go to one direction and the other one go to and other direction, and disable one of the curtain wall system is not room boundary, just to keep the room tag function correctly.
However, if the cutain wall you are creating is not vertical, then you have to the trick in the curtain wall panel family, just do an extra extruction pretent to be a mullion. I think that willl do in most situation.

It seem like you should be able to do this but i guess not. You could create a ruled curtain system based on lines. each horizontal section would be a separate system. then apply only one mullion where they butt eachother.

I created one using the curtain system. i made a video how-to but is 2.5mb. attached an image.
