I can get the GYP layer to wrap fine in plan, but I want to have it wrap in section as well on a window's head. See attached images.

Is there a way to do this?

No, Revit can only wrap in plan views.

We do it as detail items on the section view, or sometimes put it in the window family. (only visible when cut)
