Quite often we have renovations where we're refacing an existing wall. E.g., a brick veneer where the concrete block remains and the brick is removed and either new brick veneer or another cladding is to be installed. We've also done projects where existing concrete walls are furred and cladded. Typically I model these as two separate wall systems, but this doesn't reflect that the existing is only partially demolished of left completely intact. 

I experimented with creating two wall families that are modeled in parallel - the part to remain and the part being demolished. So, a wall made of just remaining blocks in parallel with a wall made of membrane, rigid insulation, air space, and brick veneer to be demolished. Problem was that doors and windows can't be hosted by more than one wall (as far as I can tell), so I had to place them on the block or veneer, which was obviously a non-starter.

How are RevitCitiers approaching these models?

I would do the veneer face as a seperate wall.  The base wall (structure) would host all openings.  You join the two walls and then the hosted elements will cut both walls.   The veneer and host wall would both be existing phase.

 

If you will be demolishing only part of the veneer, you can place two veneer walls in the same place and sketch their profiles so one is existing to remain and the other is demolished.  << Sometimes the demolished portion is better done as linework.
