I know this is probably a dumb question, but I'm looking for the easiest way to tag walls by category and have a schedule to install on each plan sheet that 'splains it.

You tag by type - not category.  We explain the tag on our wall types sheet.

We use a seperate wall types sheet that legends each wall type and calls out all the materials.  We have wall general notes, special wall details like acoustic seals and we explain the wall type tag which includes the wall head condition - an instance variable. ( to ceiling - to above the ceiling - to deck )
