is it possible to make mortar lines on the stone in Revit in order to make the stone look more realistic? if so, how do you go about doing this?

This is a modern, computer based "problem".  But is it really?

 

Just because you can zoom into an elevation to where you can see the mortar doesn't mean you should show it.   You can assign model based hatch patterns to materials that show both edges of the mortar BUT DON'T DO IT!  Single line representation is the standard for 99%  views.  Full mortar graphics will not show in small scales and will bog down your system.  Views with materials will show the material and not the pattern so they have what you want.  If you have an enlarged view, you can always over-ride by element the surface pattern using your more detailed pattern.

I think WWHub answered you question in his post.  Use single lines if your in a 2D view and a material if you need it rendered or shown in a realistic view.
