I'm working on a project where I would like to make a sheet that shows the structure of each floor, with labels showing each part of the structure and their thickness. I've found this add-on http://www.cadstudio.cz/revittoolsen that seems to do what I want with the Floor legend function, but is it possible to do it without any add-ons?

Go to your legend view and in your Project Browser scroll down and find the floor family you want in your legend and simply drag and drop it onto your sheet. You can control the detail level of each floor in the properties of the floor once its placed.  It will not annotate itself so you would have to do that.

I was looking for a way to annotate the floor families automatically, but if there were such functionality in Revit there would be no need for an add-on I guess... I downloaded the trial of Revit tools and the floor legend function works as expected, even though it seems like you have to regenerate the legend every time you change the floor structures.
