I have some experience with Revit 2013 from college, but my employer has Revit MEP 2011. I am having issues with getting elevations and 3D views to appear realistic. Walls appear white with gray outlines. Is this the best I can get with MEP? I have tried assigning materials and editing colors and textures, but no results. Also, when I export to AutoCAD I can edit appearances to my heart's content. Mechanical components appear fine, which is why I'm assuming it is an issue with the software version I'm using.

Your problem is not the software - it is mostly process error.
MEP does have different settings. Try changing your view to coordination.

Is your visual style set to Realistic? Are there any visability graphic overrides? My main assumption is that your discipline is most likely set to Mechanical, if you change it to Architectural or Coordination I bet it looks correct. Images of the problem are always helpful
