I have created a gold material with cutouts that looks very different from two different angles. Can anyone tell me why? Guessing it has something to do with the way the sun is falling upon the object, but do not really know what to do about it.

You are correct. Why would you want it to look different than it should? Materials always look different dependent on the lighting.

Exactly. Very much depends on the lighting settings and also material properties, reflectosity etc.
