This may seem like a simple issue to some, but I create a lot of existing drawing and them add on additions or renovate the space etc. Currently I draw everything and then change the wall/door/windows etc to existing. Can I set up Revit to draw in existing and them change it to new when I want to add new wall/doors/windows etc.

yes you can duplicate your level 1 drawing, rename it Level 1 - Exisiting or something to that effect and change the phase of the view itself to existing. Now when you draw anything in that view, it will be in the existing phase.
