I have created a MH family that has a depth set as an instance parameter,
Is it possibe to use a formula within the family to return a text string. Ie
If MHDepth < 2000 = "Type A" if not "Type B"
And have Type A or B appear in my schedule
I think I am getting stuck with it being an instance parameter

Sure you can, but in a different way, each formula has its rules to follow.
You might even try to create a printable catch basin schedule.
Please download the "08-Openings", "08 10 00-Doors & Frames", "Adjustable Hollow Metal Door for CMU Wall Revised",
which has some interesting formulas, have fun.
