If anyone has input/suggestions for shortcuts related to dimensioning building symmetry, I would be interested. Ex. in Autocad, I would dimension one side of a symmetrical building and mirror the dims. to the other side. This was a huge time saver, but this doesn't seem to work in Revit.

Personally I do not "double up" on dimensions.  If one side of your building has the same dimensions as the other I would only dimension one side.  I do not believe there is a shortcut to dimensioning the way you are looking for.

AutoCAD was just 2D so you could do that.  You can do it in revit too (mirrored about the witness point) but the witness lines will goto where you set them in your original dimension.  Probably not a good thing.  Just mirror them, then before finishing, drag them to your other side of the building

 

This is really not a disadvantage.  There are so many advantages that you will so disregard this.

Thanks for input. When you "just mirror them and then drag.." what are you mirroring about?

Use the mirror tool that allows you to "draw" the mirror line.  As I said though, that does't matter because the mirror point will be the end of the witness lines.
