We need to slope this roof 10° and we only know one point where it has to be 2000mm hight.

How would you do it since revit needs the slope arrow to be from edge to edge?

 

Would you calculate it manually, (by making a section), everytime the roof boundary changes?

I don't understand your question.  It looks like you are sketching it right. 

 

Place your slope arrow from edge to edge at the 10 degree slope. Then simly cut a section at that point and move the roof up or down to the right location.

Yes, you got it. But  using that process there is no parameter where I can write in the angle of 10°?

First, set your unit dimension for slope to decimal degrees.  Manage Tab, project units, slope

Second, pick your roof to edit, then your slope arrow.  Under its properties, click in the Constraints / Specify and pick Slope.

 

Now the slope parameter is editable.
