Ok so I want to create a winder stair with 2 risers going around a 90deg corner but Revit will only seemingly allow me to use the winder tool to create a 3 stair winder (and that isn't even an even spread around the corner). I can't seem to manipulate enough it without going into sketch mode. Is it possible to do this with the tools available & if so how?

I believe you are going to have to sketch the stair to get the results you are looking for.  Your other option is once you have your stair component drawn, click on the stair and on the tools tab click CONVERT which will convert the component to a sketch and then Edit Sketch and edit your treads as needed.

Using the winder tool I can get close, but just not close enough! I've done a run for the first & last sections, then deleted the landing that automatically connects the two & drawn the risers & boundary in to fit. It works but it's not an elegant solution as I get multiple up arrows!

Another tool that doesn't quite work!

Did you try the way I suggested by converting once drawn?  It should take care of your problem.  Also you can shut off your UP arrows if you don't want them shown.
