Once I select my 'East' and 'South' on the 'Elevations' 'Properties Menu' it shows up an Cross Section instead of a side profile. How can I change this?

Go to a plan view, select by crossing your elevation symbol and move it away from the building.

Just clarifying Typhoon's comment in case you are a new user....when you select the elevation symbol in plan, a blue line will appear which indicates the view plane of the elevation. Click and drag this away from the building. It is most likely going through your model right now, which creates a section.
