why is it that every time I move a curtain wall it automatically inserts new mullions into the wall without me doing so manually. If I stretch it or move it it adds new mullions that i have to go back and remove and it messes up my grid.
Any thoughts? Should I be using a different tool be sides the wall tool and curtain grid wall type to creat curtain walls?

It is a problem you created for yourself. You are using what I call an automatic curtain wall. One or more of your settings are setup in the curtain wall type you are using.
That's fine for initial placement but then we like to "un-lock" all of these settings by changing the type to one that has no-preset conditions. Then you can edit as much as you like.
