When I open edit family and change my door swing to a dashed line the hidden line is out of scale (only 2 dashes) and is blue. When I went to adjust it in the family the line styles tab is greyed out. Any suggestions?

I suggest you do not do this in the family. The door plan swing can be set in the project (object styles) at the project level or at the view level (VG).
