How would I go about designing stairs that don't have a straight path?
Example: stairs that curve to one side while going up.
I have tried several ways and was unsuccesfull.

Just sketch it the way you want it.

Here's a few quick tips.
Make sure you 'split' the boundary lines where ever it goes from flat to sloping.
Riser lines must start and end on a boundary line.
You can only have two boundary lines and they cannot touch each other.
None of the linework can cross each other. Just intersect.
